This bittersweet smoothie has a refined and moreish balance of flavours. The sweet banana base is in a grown up discussion with the bitter grapefruit. The tropical tartness of the grapefruit and the anise-like nose of the fresh tarragon support each other with elegance for a smoothie that will remind you that not only are grapefruits great – but you can be grown up.
Make sure your grapefruits are chilled in the fridge over night because even adults don’t like warm grapefruits.

150ml ice
2 large yellow grapefruits
2 bananas
1 passion fruit
a good grab of fresh tarragon
